We always try to keep a good Brazil in the Roastery and this is a very special lot. When it's time to harvest only the ripest cherries are hand picked before being immediately placed into bags below the coffee tree. This is a cool and shady area where the heat is not so strong, allowing the beans to undergo a process of dry fermentation otherwise known as tropical fermentation. During the harvest the climate at Serra do Cabral becomes very dry providing unique conditions to create this extraordinary profile. After a couple of days have passed the cherries are washed to remove any residue from the bag as well as any floaters! Before being placed on raised beds to dry.
