Ethiopia Yirgacheffe Idido Heritage
The Idido village in the Yirgacheffe district of Ethiopia is renowned for producing some of the finest coffee beans in the world with a fertile landscape and skilled cultivation. The small farm is nestled at an altitude of 1960 to 2090 meters above sea level. This highland region offers the perfect climate and conditions for cultivating this exceptional high-quality Arabica coffee. The plantation benefits from rich volcanic soil, ample rainfall and cool temperatures that contribute to the distinctive characteristics of its coffee.
Farmers meticulously handpick the cherries to ensure only the ripest and best quality beans are selected. After harvesting they deliver them to the washing station where they undergo a fully washed process which involves removing the pulp and fermenting the beans for 72 hours to enhance their flavour clarity and brightness. After fermentation, the parchment is washed and placed onto raised drying beds to promote even air circulation and consistent drying, this is where they remain for 12 – 15 days reaching the optimal moisture content before hulling and preparing for export.
In terms of flavour, Idido coffee is celebrated for its distinctive and delightful notes. Each sip reveals a vibrant cranberry acidity, complemented by the floral and citrusy undertones of bergamot. This is balanced by the smooth, creamy sweetness of milk chocolate, creating a harmonious and complex cup that is both refreshing and indulgent.
