El Salvador El Ingenio Coffee

Description

Description

El Ingenio dates back to 1875 when Juan Urrutia planted the first coffee trees at high altitude, the first crop of 27 bags was produced. As the farm expanded and grew, the family worked diligently to enhance the quality of their coffee each year. Today the sixth generation Enrique, Rene and Gustavo manage the farm with their father, Gustavo, still providing valuable help and advice. Over the years they have reached the finals of the cup of excellence and received numerous accolades, including Exporter of the year in 2015 and in the top 5 in 2017.

All the Urrutias Estate coffees are 100% shade grown providing optimal growing conditions for Arabica coffee.  Native trees are planted annually to prevent erosion. The primary trees grown, Izote and Copalchi, serve as natural wind barriers and contribute to the overall health of the ecosystem. The farm, a UNESCO Biosphere Reserve, is Rainforest Alliance Certified indicating their commitment to sustainability and environmentally friendly farming, with a variety of resident and migratory birds. Home to 24 mammal species, 259 insect species and over 120 migratory birds spreading over the 170 acres of natural rainforest of which 20 – 30% is the El Ingenio farm.

The San Antonio wet mill is where the coffee cherries are passed through sophisticated depulpers, ensuring the best cherries are selected and processed. A processing machine or ‘Criba’ will move the unpulped cherries onto the next depulper, four lines are available if needed allowing the best cherries to be processed first. This is followed by a 13-14 hour fermentation stage. The coffee is then washed, placed into a wet fermentation tank and dried using guardiolas and patios depending on the weather and the volume delivered to the mill.

El Ingenio coffee is grown at high altitude in volcanic soil which provides optimal conditions for producing high-quality coffee. The flavour notes are a delightful blend of crisp apple acidity balanced with the smooth sweetness of chocolate & caramel followed by a lingering hint of toffee………You will certainly enjoy each sip!. Like all our single origin coffees, our speciality beans are small batch roasted in our artisan Hampshire roastery.
